American Wagyu is Japanese Wagyu genetics crossed with American Black Angus — bred to deliver the intramuscular marbling Wagyu is known for, raised on American grasslands by American ranchers. The result is beef that's fundamentally different from anything you'd find at the supermarket.

Marbling is the story. Those tiny veins of intramuscular fat melt during the cook, basting the meat from the inside. The flavor is deeper, the texture is closer to butter than to muscle, and the cook tolerance is wider — Wagyu forgives heat and timing in a way leaner beef does not. But marbling doesn't happen by accident. It takes longer feeding, more careful husbandry, and a smaller herd where every animal can be managed individually.

The Wagyu Rule

Temper before you cook. Pull the steak from the fridge 30 minutes ahead so the marbling renders evenly. Then keep your heat in check — Wagyu doesn't need hot-as-the-sun. The fat is the flavor; high blast heat melts it out of the meat instead of through it.

Who is Patrick Montgomery?

Patrick is an Army Ranger combat veteran who founded KC Cattle Company in 2016 after his military service. He went on to found Valor Provisions in 2024 to bring KC Cattle's standards to other veteran- and family-run American ranches. KC Cattle is Valor's flagship brand — the proof that the model works.

What's the difference between American Wagyu andJapanese Wagyu?

Japanese Wagyu is purebred Wagyu (Black, Brown, Shorthorn, or Polled), raised in Japan under tightly controlled standards. American Wagyu is the same Japanese Wagyu genetics crossed with American beef cattle — typically Black Angus. The result keeps the marbling that makes Wagyu famous while being more readily available, more reasonably priced, and (some would argue) better suited to American cooking styles. KC Cattle raises American Wagyu.

Is KC Cattle's Wagyu grass-fed?

Yes and no — and we'll be straight with you about it. KC Cattle's Wagyu is raised on pasture but finished on grain. Grain finishing is what produces the intramuscular marbling that makes Wagyu what it is. A 100% grass-fed program would produce a leaner, fundamentally different beef. If grass-finished is your priority, our Plainview Beef Co. partner ranch raises 100% grass-fed beef; if Wagyu marbling is what you're after, KC Cattle is the right ranch on Valor.

KC Cattle was featured in Food & Wine. What was that about?

Food & Wine featured KC Cattle's wagyu hot dogs in mid-2019, and again in July 2025. The first feature drove $250,000 in sales over three days — the kind of editorial demand that validates a brand. The features focused on KC's everyday Wagyu products (hot dogs, brats, burger patties) and the veteran story behind the ranch.

Why is the Wagyu Ribeye so much more expensive than supermarket ribeye?

Three reasons. First, the genetics — Wagyu calves cost more to source. Second, the time — KC's animals are raised on a longer feeding cycle than commodity beef, which means more inputs per animal. Third, the scale — a 190-head herd doesn't get the per-unit cost benefits of a 10,000-head feedlot. The result is a meaningfully better steak, and a price that reflects the actual cost of producing it. Members get member pricing on every KC Cattle product, which closes the gap considerably.

What are KC Cattle's best-selling products?

The everyday Wagyu wins: Wagyu Ground Beef, American Wagyu Burger Patties, the World Famous Wagyu Gourmet Hot Dogs, Wagyu Bacon Cheeseburger Bratwurst, Wagyu Summer Sausage, Wagyu Shaved Peppered Beef. Frozen, in insulated coolers with dry ice. 1–3 day handling and 1–3 day transit nationwide. Shipping is calculated at checkout — you'll see the cost before you confirm.
