I think because it comes from the pork shoulder rather than the belly, the taste was somewhat unconventional (for me) for a traditional bacon and eggs breakfast. It's way leaner than traditional bacon and it was mildly smoked, so you don't get that oomph of smoked bacon taste that usually comes with bacon. It was superb, however, on a BLT we made for lunch. It's subtlety smoked and has thick pieces that played well with the Romaine lettuce and tomato.
