Ingredients:

  • 1 lb thinly sliced Wagyu Suadero (Taco Meat)
  • 1 cup beef broth
  • 1/4 onion, chopped
  • 2 cloves garlic, smashed
  • 1/2 bay leaf
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp cumin
  • 1/4 tsp oregano
  • 1 tbsp lard or beef tallow
  • Corn tortillas, for serving
  • Chopped cilantro, diced onions, and lime wedges for garnish

Instructions:

1. Simmer the Suadero:

  • In a pot or deep skillet, combine the beef broth, onion, garlic, bay leaf, salt, pepper, cumin, and oregano.
  • Add the thinly sliced suadero and bring to a gentle simmer.
  • Cook for 30-40 minutes, stirring occasionally, until the beef is tender.

2. Crisp It Up:

  • Remove the suadero from the broth and let it drain.
  • Heat lard or beef tallow in a skillet over medium-high heat.
  • Add the suadero in a single layer and sear for 2-3 minutes per side until crispy and golden brown.

3. Assemble the Tacos:

  • Warm the corn tortillas on a dry skillet or open flame until lightly charred.
  • Fill each tortilla with crispy suadero and top with chopped cilantro and diced onions.
  • Finish with a squeeze of fresh lime juice.

4. Serve & Enjoy:

  • Pair with salsa verde, smoky chipotle salsa, or pickled jalapeños for extra flavor!
