Ingredients:

  • 1 Cowboy Steak ~2.5 lbs
  • 1 tbsp salt
  • 1 ½ tsp black pepper
  • 1 ½ tsp garlic powder
  • 1 tbsp olive oil
  • 3 tbsp butter
  • 3 cloves garlic, smashed
  • 2 sprigs fresh rosemary or thyme

Instructions:

1. Bring to Room Temperature:
Remove the steak from the fridge 60 minutes before cooking. Pat dry and season generously with salt, pepper, and garlic powder.

2. Preheat & Sear:
Heat a cast-iron skillet or grill to high heat. Add olive oil. Sear the steak for 4–5 minutes per side, creating a deep crust.

3. Add Butter & Baste:
Reduce heat to medium-low. Add butter, garlic, and rosemary. Tilt the pan and spoon the melted butter over the steak for 1–2 minutes.

4. Finish Cooking:
For a perfect medium-rare (130–135°F), transfer the steak to a 400°F oven or indirect grill heat. Cook for 10–15 minutes, checking with a meat thermometer.

5. Rest & Serve:
Let the steak rest for 10–15 minutes before slicing. Enjoy with roasted vegetables or a loaded baked potato!

Pro Tip: Reverse sear for even cooking—start in a 250°F oven until the steak reaches 110°F, then sear for a crispy, caramelized crust!
