Beef Chorizo Queso Fundido

This spicy, cheesy masterpiece is a must-have for game days, parties, or anytime snacking! Bold beef chorizo, melty Oaxaca and cheddar cheeses, and a touch of smoky spice come together in this ooey-gooey, irresistible dip. Scoop it up with warm tortillas or crispy chips for the perfect bite of cheesy, meaty goodness. Easy to make and even easier to devour. Get ready for your new favorite appetizer!

Ingredients:

  • 1 lb Wagyu Beef Chorizo
  • 2 cups shredded Oaxaca or Monterey Jack cheese
  • ½ cup shredded cheddar cheese
  • ½ small onion, diced
  • 1 jalapeño, diced (optional)
  • 1 tsp smoked paprika
  • ½ tsp cumin
  • 1 tbsp olive oil
  • Warm tortillas or chips for serving

Instructions:

  1. Cook the Chorizo: Heat a skillet over medium heat. Add olive oil and onions, cooking for 3-4 minutes. Stir in beef chorizo and cook until browned, about 5-7 minutes.
  2. Season & Simmer: Add jalapeño, smoked paprika, and cumin, stirring well. Remove from heat.
  3. Melt the Cheese: Preheat oven to 375°F. In an oven-safe dish, layer shredded cheeses and chorizo mixture. Bake for 10 minutes, or until melted and bubbly.
  4. Serve Hot: Stir slightly and serve with warm tortillas or crispy chips for dipping!
