I ordered the Bravette and got a Denver steak. Which was fine, but was, in total, 8 oz. lighter than the advertised Bravette. Literally a half pound of steak that I paid for and didn't receive.
I dry brined it with kosher salt and ground pepper for 8 hrs.
Then seared it over blazing hot coals before moving it over to the indirect heat part of the grill. Pulled it at 125°F internal.
Carryover cooking took it to a perfect medium rare.
Sliced it against the grain, and oh my. So delicious!
Intramuscular fat renders beautifully without wasting space on bug extra hunks of exterior fat. Smoked until it hit 120, let rest, hot grill to crisp up the outside, rest again because the fat/juice in these things is crazy. Perfect hunk of meat!
The flavor was incredible.
We are a KC customer who prefers the Flank Steaks overall until we tried the Bavette! Wow! We used olive oil and the KC seasoning to grill this delicious piece of meat! It’s super tender and extremely flavorful! A little farro and grilled vegetables on the side-fantastic! Now it's another one of our favorite weekly grilled meats!
