Grass Fed Ancestral Ground Beef from Plainview Beef Co., WaKeeney, Kansas
At Valor Provisions, we partner with American ranches that can show you exactly how the animal was raised. Plainview Beef Co. is the Orr family's cattle company in WaKeeney, Kansas, and this is their Ancestral Ground Beef: 100% grass fed and grass finished beef, ground with organ meat in one fixed nose-to-tail blend. You get the nutrition of organ meat in a 1 lb pack that cooks like the ground beef you already make.
What Is Ancestral Ground Beef?
Ancestral ground beef is ground beef with a measured share of organ meat blended in. Plainview's formulation is 80% muscle meat, 12% fat and 8% organ meat, and it stays the same from pack to pack. Organ meat packs a concentration of vitamins and minerals that muscle meat alone does not, but most people are never going to cook it on its own. Plainview built this blend so you do not have to: it is made to cook, taste and handle like regular ground beef.
Why You'll Love It
100% Grass Fed and Grass Finished: Raised on Kansas pasture and sprout-finished to the Plainview Standard.
Nose-to-Tail Nutrition: 8% organ meat in every pack, with nothing extra to prep or cook.
No Antibiotics, No Added Hormones: Written into the Plainview Standard.
A Century of Kansas Ranching: The Orr family has raised cattle in Kansas for more than 100 years.
In Plain View: Plainview posts its third-party lab results publicly for anyone to read.
Weeknight Ready: Burgers, tacos, chili, meat sauce and meal prep, from one 1 lb pack that ships frozen.
How to Cook It
Use it anywhere you would use ground beef. Thaw overnight in the refrigerator. Cook over medium to medium-high heat to an internal temperature of 160°F. Grass fed beef tends to cook a little faster than conventional beef, so pull burgers as soon as they reach temperature and let them rest a few minutes before serving. New to organ meat? Start with tacos, chili or meat sauce, where the seasoning leads, then move on to burgers.

The Plainview Beef Co. Story
The Orr family has raised cattle in Kansas for more than a century. Plainview is how they sell that beef directly to households, and the name is the point: they want you to see what they do in plain view. The cattle are raised on regeneratively managed Kansas pasture, monitored by GPS, and sprout-finished with fresh sprouts grown on the ranch. Then Plainview posts its third-party lab results publicly so you can read them yourself. Every order supports a family-owned Kansas cattle company and puts beef on your table that you can trace back to the people who raised it.
